Ingredients for the Ginger Peanut Chicken:

  • 4 boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 tablespoons peanut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup chicken broth
  • 1/4 cup peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon red pepper flakes
  • Salt and pepper, to taste

Ingredients for the Coconut Rice:

  • 1 1/2 cups basmati rice
  • 1 1/2 cups water
  • 1 can (13.5 oz) coconut milk
  • Salt, to taste

Instructions:

  1. Rinse the rice in a fine-mesh sieve and transfer to a medium saucepan. Add the water, coconut milk, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the liquid has been absorbed and the rice is tender.
  2. While the rice is cooking, heat the peanut oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes or until browned on all sides.
  3. Add the onion, garlic, and ginger to the skillet and sauté for 2-3 minutes or until the onion is translucent.
  4. In a small bowl, whisk together the chicken broth, peanut butter, soy sauce, honey, red pepper flakes, salt, and pepper. Pour the mixture over the chicken and vegetables, stirring to coat.
  5. Reduce the heat to low, cover, and simmer for 10-15 minutes or until the chicken is cooked through and the sauce has thickened.
