Strawberry White Chocolate Cookies

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup freeze-dried strawberries, ground into a powder
  • 1 cup white chocolate chips

Directions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, using an electric mixer, cream the butter and sugars until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Mix in the ground freeze-dried strawberries until well combined.
  6. Gradually mix in the flour mixture until just combined.
  7. Stir in the white chocolate chips.
